Purple corn, it belongs to the Poaceae family. It is another corn variety which is original from the Peruvian Andes, unique in the world for having the crown and the grains of a characteristic purple color, due to the pigment called anthocyanin that it has.
This variety of corn is used by the Andean population to provide color to food and beverages; currently, the industrialized world has been exploiting this product due to its great benefits. It is used from the entire cob for the preparation of the famous drink chicha morada. Also, with this corn it is possible to prepare a popular dessert in Peru called mazamorra morada.
